Happy Packages


How are you holding up? I hope okay.

Our family has been making a dinner ritual of saying what brought us the most happiness and gratitude that day. Rule is you can’t repeat or else Wyatt would say “Radar” every night like a little one word prayer. He just loves his dog.


Naming your graces changes the way you look at the day. I swear it helps me to see beauty and gratitude whereas before I might have just moved on.

Grateful for new habits. And OAT PANCAKES! Now I am not a pancake person but the boys love them so I decided to surprise them for breakfast. The pancakes were such a hit!

Don’t give up when you see you have to grind the flour. In a blender or food processor it takes mere seconds and it is sooo worth it. I adapted this from the oat pancake recipe by Alice Waters.


Start with one cup oats.

Pulse in blender for several seconds.

It will look like this. It’s okay if the flour is still a little oaty and here we added a little almond flour for protein and nutty taste.


In a separate bowl, add 3/4 cup of milk and one egg. Whisk together.



Add three tablespoons melted butter or coconut oil, stirring the whole time. Can you tell which we used? Look at that yellow!!

Once that was mixed we put the flour in the bowl and added half of a teaspoon of salt.

Then add a half teaspoon of baking powder.


Finally add a tsp baking soda.

Mix all together and let it sit for a few minutes if you need it to thicken. We used a thicker milk and with the almond flour we definitely did not need to let ours get any thicker than it was.

But they turned out delicious and they were devoured with bananas. Yum!


Those set the stage for a great day and it was really hard to top on the happiness scale for the boys. Except for Sarge.

He got to sit with his daddy after dinner and read Dr. Seuss. And let‘s face it, Dr Seuss can make anyone happy, even his own Grinch. So can dad.

But I might have been most happy for my little kitchen helper, Everett Jack. I used the mandoline and took care of the oven, but he did everything else! He made them like the ”shingles on a treehouse”. We don’t have a treehouse, but I see it...

So it was a lovely day indeed. What made you happy today?


Oh, I almost forgot. This super thoughtful and sweet package came in the mail for us today from the violin shop in town to keep the boys playing! Isn’t that sweet?!!

I’m so busy remembering my kitchen helper that I almost didn’t mention it. But the package certainly made It tough to choose what to say at dinner for happyness-makers. I even let the boys eat the candy! (A girl can change...)


I couldn’t help but marvel at that beautiful dark rosin. It’s purple black! So beautiful for a deep rosin but NOT for a mole on your skin. For Skin Cancer Awareness Month, examine your skin and make sure to have any mole that has the same color as this rosin evaluated right away.
